The ingredients needed to make Tom Kha Soup:
  1. Take 6 cloves Garlic
  2. Take Shallots
  3. Make ready 5 Tbs Lime juice or 1 lime
  4. Get Chilis
  5. Get 3 chicken breasts or thighs cut into thin slices. Can sub shrimp
  6. Make ready 4 cups quality chicken stock
  7. Get 2 Tbs Coconut oil or vegetable oil
  8. Take 3 Tbs Brown sugar or coconut aminos
  9. Make ready Salt to season chicken
  10. Make ready 4 cups full fat coconut milk
  11. Make ready 3 Tbs Red curry paste
  12. Get 2 Tbs Fish sauce
  13. Get Low sodium soy sauce (add last and only if needed)
  14. Make ready 2-3 Tbs Garlic red chili sauce or red pepper flakes
  15. Prepare Mushrooms 2 8 oz packs
  16. Make ready Ginger 4, one inch pieces peeled
  17. Get 3 Lemon grass stalks, pound and cut in half
  18. Make ready 1 bushel Cilantro
  19. Prepare 2 bushels green onion
Instructions to make Tom Kha Soup:
  1. Cut chicken into thin pieces about 1 inch in size. Season and set aside.
  2. In a medium frying pan heat oil and cook shallots, garlic, tomatoes and chilis until shallots are soft and add to the pan below only once the chicken is done browning.
  3. Over medium heat oil in a larger pot or skillet (keep in my you're going to be adding 8 cups of liquid to this pan). Add chicken and brown on either side for 1 minutes or so. You don't want to over cook the chicken at this time as it's going to continue to cook in the soup. Remove the chicken from the pan and set aside.
  4. Add chicken stock, lemongrass, red curry paste, and ginger to the chicken pot above and let simmer for 40 minutes.
  5. Then add the chicken back in and sliced mushrooms, garlic chili sauce, and coconutmilk to the pot. You can also add in other veggies at this time if you want to add more. Cook for about 5 minutes.
  6. Add the lime juice, fish sauce, brown sugar and soy sauce if you choose to use soy sauce. Taste and adjust seasoning as needed.
  7. Ladle into bowls and top with chopped green onions and cilantro.

This is possible because these foods are rich in magnesium which boosts your production of serotonin. Serotonin is a feel-good substance that dictates to the brain how to feel at any given point in time. The more of this chemical in your brain, the happier you’ll feel. Nuts, along with elevating your mood, can be a superb protein source.

Cold water fish are excellent if you are wanting to feel better. Salmon, herring, tuna fish, mackerel, trout, etcetera, they’re all loaded with omega-3s and DHA. These are two things that actually help the grey matter in your brain work a lot better. It’s true: consuming a tuna fish sandwich can actually help you fight back depression.

Grains can be great for fighting a bad mood. Barley, millet, quinoa, etc are fantastic at helping you have a happier mood. They fill you up better and that can help you with your moods also. Feeling famished can really make you feel awful! These grains can help your mood elevate because it’s not at all hard for your body to digest them. These foods are easier to digest than others which helps promote a rise in your blood glucose which in turn takes your mood to a happier place.

Your mood can actually be helped by green tea. You knew it had to be in here somewhere, right? Green tea has a lot of an amino acid called L-theanine. Studies prove that this specific amino acid can actually stimulate brain waves. This will improve your brain’s focus while also loosening up the rest of your body. You were already aware that that green tea helps you be better. Now you are aware that green tea helps you to elevate your moods as well!
