Gizdodo, also known as gizzard and dodo, is a stir-fry of gizzards and fried plantain that is ever-popular at most Nigerian parties.

Steps to make Gizdodo & Veg stir fry:
  1. Boil gizzard with salt, chopped red onions and seasoning cubes. Cut into bite size pieces and fry.
  2. Dice and fry your plantains in the same oil used to fry the gizzards.
  3. Chop your veggies, tomatoes and chillies.
  4. Take out some of the oil used to fry your gizzards/plantains and pour into a pan. Add Curry powder, thyme and fry for a minute.
  5. Add chopped tomatoes and chillies to the oil and fry for a few minutes.
  6. Add your gizzard pieces, turn down the heat and cover so the gizzard can absorb all the flavours in the pan.
  7. Once sauce has thickened, add your fried plantains, chopped veggies and fry some minutes.
  8. Season to your taste and Turn off heat.
  9. Garnish with chopped spring onions and serve with white rice….. Yum!
