Steps to make Nigerian Gizdodo_gizzard and banana:
- Put the bananas while unpeeled in a pan put some little water and cover with banana leaves
- Cover with a banana leaf to retain moisture
- Simmer till tender remove from water
- Peel them by cutting them at the front with a knife and peel
- Fry.the bananas in oil
- Turn side when brown
- Remove from heat
- For the stew
- Clean the gizzard making sure the green inner membrane has been removed
- Boil the gizzard for 12 minutes
- Remove from water and cut into smaller pieces
- Fry the gizzard in oil till brown stirring continously in your non stick pan
- Add the onions fry till brown,add tomatoes fry till tender,add carrots
- Add royco and a little water cover n simmer for 5 minutes
- Serve with plantain or banana garnish with spring onion
