  1. Break up the ingredients for the base finely in a plastic bag. Do this until the mixture is moist. Tip: Return the butter to room temperature before you add it!
  2. Press the base mixture firmly into the bottom of the mold. Chill in the refrigerator.
  3. Put the cream cheese in a bowl, warm for about 30 seconds in the microwave, and stir. Add the yogurt and coffee cream, and stir some more.
  4. Add the sugar in 2-3 batches to the Step 3 bowl. Add the lemon juice and mix.
  5. Heat the soaked gelatin over a hot water bath until it's liquid. Mix this rapidy into the Step 4 mixture, and pour into the chilled mold from Step 2.
  6. Refrigerate for 2-3 hours and it's done. Be careful when removing the cake from the mold!
  7. This is delicious eaten topped with blueberry or raspberry sauce!
