  3. Without putting any oil in the pan, warm the frying pan on a medium heat and set the fat of the meat on the pan. This way, the fat will come out.
  4. Next, cook one side. At this point, season with salt and pepper. Cook for 1-2 minutes, then flip it over and season the other side with salt and pepper as well.
  5. When the meat has expanded, pour in the brandy to give it a nice aroma. When you flambé, it will burn off the excess fat.
