- …then some pickled red onion. If you want to add ketchup, BBQ sauce etc., do it now. Ill be serving mine on the side. Season, and add some more cheese. The Emmental cheese I'm using is not very salty, so I'm taking that into account
- Now put the lid on toasted side down. Press down, and put in a preheated sandwich toaster for about 6-7 minutes. Check to see if it's browned nicely, if not, give it a couple of minutes extra
- Before plating, cut and trim any unpleasant bits from your sandwich. I find scissors are the best tool for this
Top with remaining bread and place in heated jaffle iron. Slather the cheese-mayo mixture on boneless chicken breasts. Seriously, the hardest part is trying to refrain from opening the oven to take a peek!
