Spiced and stewed in a flavorful tomato broth, it is everything from "everyday" to celebration. The classic version is cooked with long-grain rice (Uncle Ben's/Carolina's) and seasoned with Nigerian-style curry powder and dried thyme. Add the rice, mixed vegetables, and water. Steps to make Jollof Rice:
  1. Prep all ingredients
  2. Parboil rice to remove excess starch. Wash and keep aside
  3. Season gizzard with scotch bonnet pepper (or black pepper) salt, maggi, garlic and sauté
  4. Fry onion and garlic with groundnut oil for a few minutes with medium to low heat to build aromatics
  5. Pour in the oil a grounded mixture of scotch bonnet,tomatoes and Romano pepper.
  6. Add salt and magic to taste. Allow to fry
  7. Add your rice to the pepper and stir with wooden spoon for even distribution! Allow to cook for about 3-5 minutes than add water in little quantity in intervals
  8. When rice is almost done add your veggies& sausages and cook for like 5 minutes(depends on you)on low heat
  9. Serve with sautéed gizzards ☺️(I added extra sweet corn to my plate because I love it)

Add the rice, mixed vegetables, and water. Bring to a boil, then reduce the heat to low and cover the pot with foil and a lid. Allow the rice to continue cooking until the rice is soft. If it is not dry at this point, then switch the heat to low to allow it to dry the excess water without making the rice much softer.
