Instructions to make Classic Thai Spring Rolls 🍴:
  1. To make the stir fry sauce: Gather the ingredients. In a small bowl, whisk together soy sauce, fish sauce, lime juice, sugar, and white pepper.
  2. Set aside to be used when making the filling.
  3. Make the filling: Toss the chicken strips in 1 tablespoon soy sauce. Set aside to marinate.
  4. Heat a wok or large frying pan over medium-high heat. Drizzle in 2 tablespoons oil, then add garlic, galangal or ginger, green onion, and chili pepper. Stir-fry for 1 minute.
  5. Add the marinated chicken and stir-fry for 2 to 3 minutes.
  6. Add the carrot, mushrooms, and cabbage along with the stir-fry sauce. Stir-fry 2 more minutes, until the chicken is opaque when sliced through and the vegetables have softened but still retain most of their crispness.
  7. Remove from heat and mix in the bean sprouts.Test it for salt and flavor. Add 1 more tablespoon of fish or soy sauce if it's not salty or flavorful enough. If it's too salty, add a squeeze of lime juice.
  8. For assemble the roll: Place a spring roll wrapper on a clean working surface. Using a slotted spoon, place one heaping tablespoon of well-drained filling lengthwise across the bottom of the wrapper, leaving 1 inch bare on either side.
  9. Sprinkle some of the fresh coriander over the filling, and you're ready to roll.Fold the left and right ends over the filling on either side.
  10. Then lift up the bottom (nearest you) and roll to the other end.Secure the roll by dipping your fingers in some water and wetting the end, "pasting" it shut.
  11. Continue rolling until you're out of wrappers and filling.
  12. Frying : In a wok or deep-sided frying pan, pour oil until it is 1 inch deep. Heat over medium-high heat.
  13. When snake-like lines begin to form across the bottom of the pan, the oil should be nearly hot enough. To test it, dip one corner of a spring roll into the oil. If it begins to sizzle and cook, the oil is ready. If not, wait another 30 seconds to 1 minute and try again.
  14. Gently place spring rolls in oil, allowing them to fry about 1 minute on each side. Spring rolls are done when they turn light to medium golden-brown. Use tongs to remove and set on paper towels or a clean tea towel to drain while you finish frying the rest.
  15. Serve with Thai sweet chili sauce.

I did the baking method for this particular time. This is great if you're really strict on "not frying". If you're someone like me and loves to indulge once in a while I would suggest just to fry them. Add the garlic, prawns, pork and bean sprouts. Remove from the heat and add the San-J.

Foods That Make Your Mood Better

Mostly, people have been taught to believe that “comfort” foods are not good for the body and should be avoided. Often, if your comfort food is essentially candy or other junk foods, this can be true. Other times, though, comfort foods can be totally nourishing and it’s good for you to consume them. Several foods actually do raise your mood when you consume them. When you are feeling a little down and are needing an emotional boost, test out a couple of these.

Eggs, you may be amazed to discover, are terrific at combating depression. Just be sure that you don’t get rid of the egg yolk. The yolk is the most crucial part of the egg in terms of helping you cheer up. Eggs, the egg yolk particularly, are rich in B vitamins. These B vitamins are terrific for helping to improve your mood. This is because the B vitamins increase the function of your brain’s neural transmitters (the parts of the brain that dictate how you feel). Try eating an egg and cheer up!

Put together a few trail mix of nuts or seeds. Peanuts, cashews, sunflower seeds, almonds, pumpkin seeds, etc are all great for helping to elevate your mood. This is because these foods are high in magnesium, which helps to boost serotonin levels. Serotonin is the “feel good” natural substance that dictates to your brain how you feel day in and day out. The more you have of it, the more pleasant you will feel. Not just that, nuts, specifically, are a fantastic protein food source.

Cold water fish are excellent if you wish to feel happier. Wild salmon, herring, mackerel, trout, and tuna are all high in omega-3 fatty acids and DHA. Omega-3 fatty acids and DHA are two things that improve the quality and the function of your brain’s grey matter. It’s true: consuming a tuna fish sandwich can earnestly raise your mood.

Grains can be great for overcoming a terrible mood. Barley, millet, quinoa, etc are terrific at helping you feel better. These grains fill you up better and that can help improve your moods also. Feeling famished can really bring you down! The reason these grains are so wonderful for your mood is that they are not hard to digest. These foods are easier to digest than others which helps promote a rise in your blood sugar which in turn takes your mood to a happier place.

Green tea is really good for your mood. You were sure green tea had to be in this article somewhere, right? Green tea is found to be chock-full of an amino acid known as L-theanine. Research has proved that this amino acid promotes the production of brain waves. This helps improve your mental energy while simultaneously relaxing the rest of your body. You were already aware that that green tea helps you be a lot healthier. Now you know that green tea can elevate your mood too!

As you can see, you don’t need to eat all that junk food when you are wanting to feel better! Try a couple of of these tips instead.
